The boneless loin is a premium and especially lean muscle which comes off the animals spine. It is free of fat, gristle and bone and the silverskin or membrane is also removed. In contrast to other cuts the loin is wonderfully lean and meaty and an individual portion goes a long way.
The boneless loin performs exceptionally well in a wide range of dishes from sautés to salads and in speciality dishes like Japanese Tataki or French Tartare. (See the recipes) Its subtle taste embraces other flavours beautifully and it performs so well when marinated to infuse a variety of spices or herbs. As the loin is so lean it’s important to watch the cooking time to optimise results.
