Sometimes referred to as mini roasts the sirloin offers an accessible alternative to a larger roast and they present so well. Sirloins are also known as rumps or chumps and consist of the full boneless rump muscle cut from the leg. The cap on variety have a nice fat cover which crisps up beautifully when seared before roasting whereas the cap off rump is leaner and well suited to a quick roast or used as an ingredient for a lamb wellington or sliced for sautéing or stir-frying.

Cooking Tips

The sirloins are extremely versatile and work well with marinades or sliced in a number of dishes such as pastas and salads. Best pan seared then quickly roasted and be sure to rest these whole muscle cuts before serving. If you like a spicy kick sirloins go well with some English or Dijon mustard as an accompaniment.
